Gastro Section: Cherry Bakewell Tarts
Let your loved one know how cherry sweet they are this Valentine's Day with some Bakewell Tarts. A traditional British dessert easy to prepare thanks to store bought tart shells! I first tried them when I was on my honeymoon with my husband in Scotland. They are undeniably delicious and make a great treat for Valentine's Day.
24 packaged frozen tart shells
1/2 cup vegan margarine
1/2 cup vegan sugar - I used organic cane sugar
1/2 cup ground almonds
1 teaspoon almond extract
1/4 cup all-purpose flour
1 vegan egg (1 tsp egg replacer mixed with 2 tbsp water)
2 to 3 tablespoons of cherry jam
1 cup vegan icing sugar mixed with 1 tablespoon of water
24 glacé cherries
Pre-bake the tart shells according to package instructions.
While they are baking, beat together the vegan margarine and sugar until creamy. Add the ground almonds and stir until combined. Mix in the almond extract, followed by the flour and finally the vegan egg.
When the tart shells are done, spoon a small amount of the cherry jam into each shell.
Next spoon a teaspoon of the almond mixture into each tart shell. With your oven set at 375F, bake the tarts for 15-17 minutes. Move the tarts to a rack to cool.
Once the tarts have cooled completely, combine the powdered sugar with the water. Spoon a teaspoon of the glaze on top of each tart. Before the glaze sets, top each shell with the glacé cherry. Once the glaze has set the tarts are ready to serve. Enjoy!
