Gastro Section: Chickpea Salad

Chickpea Salad

·       1 cup chickpeas
·       2 celery sticks chopped
·       4 baby carrots chopped
·       2 radishes chopped
·       1 medium or large tomato diced
·     2 tablespoons of finely chopped green onions
·     Handful of blueberries (or half an apple)

Cilantro Dressing
·       A bunch of cilantro
·     1 tablespoon tahini
·     3 tablespoons lemon juice
·     1 teaspoon salt
·     Half clove of garlic
·     2 tablespoons onion (about a half a small one)
·    About ¼ cup extra virgin olive oil
·     Pepper to taste

In a food processor add cilantro, tahini, lemon juice, salt, garlic and onion; start pulsing ingredients together. Then slowly add olive oil while food processor is on, once the consistency is a paste add salt and pepper to taste. If you prefer it slightly thinner, feel free to add more olive oil or water until desired consistency is attained.

Wash and drain 1 cup of chickpeas and place in a bowl, add chopped celery, carrots, radish, tomato, green onions, blueberries, and about 2 tablespoons of dressing.  Mix well.  Add salt and pepper to taste.  Serve cold and enjoy!
